Ingredients:

7 cups all-purpose flour (0.88 kg)
1/4 cup shortening (0.057 kg)
Vegetable oil for frying
2 cups powdered sugar (0.24 kg)
Instructions:
Activate the Yeast:
In a large bowl, dissolve the yeast in warm water. Let it sit for about 10 minutes until it becomes frothy.
Prepare the Dough:
Add the granulated sugar, salt, eggs, and evaporated milk to the yeast mixture. Mix well. Gradually add 4 cups (0.5 kg) of the flour and mix until smooth. Add the shortening and continue mixing while adding the remaining flour until the dough is smooth and elastic.
Rest the Dough:
Cover the bowl with plastic wrap or a damp cloth and refrigerate for at least 2 hours, or overnight, to let the dough rise.
Roll and Cut the Dough:
On a lightly floured surface, roll out the dough to a thickness of 1/4 inch (0.6 cm). Cut into 2 1/2 inch (6.4 cm) squares using a knife or pizza cutter.
Heat the Oil:
In a deep fryer or large, heavy-bottomed pot, heat the vegetable oil to 360°F (182°C).
Fry the Beignets:
Carefully drop a few squares of dough into the hot oil, frying them in batches. Fry each beignet for about 2-3 minutes on each side until they are puffed up and golden brown. Use a slotted spoon to remove the beignets and place them on a plate lined with paper towels to drain.
