Aaruul (Mongolian Dried Yogurt)

Ingredients
- 2 liters (8 cups) whole milk
- 2–3 tablespoons plain yogurt (for starter culture)

Prepare the Yogurt Base
Heat the milk in a heavy-bottomed pot over medium heat until it reaches about 85°C (185°F), stirring occasionally to prevent scorching. Remove from heat and let the milk cool to around 45°C (113°F). Stir in the plain yogurt thoroughly, ensuring it is evenly mixed.

Ferment the Yogurt
Pour the milk mixture into a clean container. Cover and let it sit in a warm place for 6–12 hours, or until it thickens into yogurt.

Strain the Yogurt
Line a colander with cheesecloth and pour the yogurt into it. Gather the corners of the cheesecloth and hang it over a bowl to drain for 12–24 hours, until most of the whey has drained and the yogurt becomes thick and firm.

Shape and Dry the Aaruul
Break the thick yogurt into small pieces or shape them into small logs, balls, or sticks. Place the pieces on a clean tray or hang them in a well-ventilated area to dry for several days. The Aaruul is ready when it is hard, dry, and slightly crumbly.

Sprinkle a pinch of salt or sugar before drying for a subtle flavor variation. Some variations include adding dried fruits or herbs to the yogurt before drying.
