2 cups Dried White Beans

1/2 cup Sunflower Oil

1 Onion, finely chopped

2 Red Peppers, finely chopped

2 Tomatoes, diced

2 tbsp Tomato Paste

2 cloves Garlic, minced

1 tsp Paprika

1 tsp Ground Cumin

Salt and Pepper to taste

Fresh Parsley for garnish


Rinse and soak the dried white beans overnight. In a large pot, boil the beans until tender. Drain and set aside. In a separate pan, sauté chopped onion and red peppers in sunflower oil until softened. Add diced tomatoes, tomato paste, minced garlic, paprika, ground cumin, salt, and pepper.
