Strukli

Strukli is a beloved traditional dish from Croatia, especially popular in the northern regions like Zagorje. This comforting pastry is filled with a rich mixture of cottage cheese and sour cream, offering a savory, melt-in-your-mouth experience. Baked or boiled, Strukli is a versatile dish enjoyed as an appetizer, main course, or dessert.

Ingredients

  • 2.2 lb (1 kg) all-purpose flour
  • 1 tsp (5 g) salt
  • 1 egg
  • 1 tbsp (15 ml) vegetable oil
  • 1 cup (240 ml) warm water
  • 2 lb (900 g) cottage cheese or ricotta
  • 1 cup (240 ml) sour cream
  • 1 egg yolk
  • 0.5 lb (225 g) butter, melted
  • Pinch of salt

Instructions

  1. Prepare the Dough

    In a large bowl, combine the flour and salt. Make a well in the center, add the egg, vegetable oil, and warm water. Mix until a dough forms, then knead for about 10 minutes until smooth and elastic. Cover the dough and let it rest for 30 minutes.

  2. Prepare the Filling

    In a medium bowl, combine the cottage cheese, sour cream, egg yolk, and a pinch of salt. Mix well until smooth.

  3. Roll the Dough

    Roll out the rested dough on a floured surface as thin as possible, aiming for a large rectangle. Stretch the dough gently with your hands if needed.

  4. Assemble the Strukli

    Spread the cheese mixture evenly over the dough, leaving a small border around the edges. Roll the dough up tightly from one end to the other like a jelly roll.

  5. Cut and Arrange

    Slice the rolled dough into pieces about 4-5 inches long. Arrange the pieces in a buttered baking dish, seam-side down. Pour the melted butter generously over the Strukli.

  6. Bake

    Preheat the oven to 375°F (190°C). Bake the Strukli for 30-40 minutes until golden brown and crisp on top.

  7. Optional Boiling Method

    If you prefer boiled Strukli, cut the dough into smaller pieces and boil them in salted water for 10-15 minutes before adding sour cream and baking for an additional 10 minutes.

Serving

Strukli can be served warm, either as a savory dish topped with additional sour cream or even sweetened with a sprinkle of powdered sugar for a dessert version.
