Shirin Polo, also known as Persian sweet rice, is a delectable and aromatic dish that combines the sweetness of dried fruits with the savory flavors of rice and spices. 2 cups basmati rice

1/2 cup mixed dried fruits (raisins, apricots, barberries)

1/4 cup slivered almonds

1/4 cup slivered pistachios

1 onion, thinly sliced

2 tablespoons butter

1/4 teaspoon ground saffron

1/4 teaspoon ground cinnamon

1/4 teaspoon ground cardamom

Salt and pepper to taste



Rinse the basmati rice under cold water until the water runs clear. Soak the rice in water for 30 minutes, then drain. In a pot, melt the butter over medium heat. Add the thinly sliced onion and sauté until golden brown. Add the mixed dried fruits, slivered almonds, and slivered pistachios to the pot. Cook for a few minutes until the fruits are slightly caramelized. Sprinkle the ground saffron, ground cinnamon, and ground cardamom over the dried fruit mixture. Stir well to combine. Add the soaked and drained rice to the pot. Season with salt and pepper, then pour enough water to cover the rice by about an inch. Bring the water to a boil, then reduce heat to low. Cover the pot and let the rice simmer for about 15-20 minutes, or until the rice is tender and the water is absorbed. Remove the pot from the heat and let it sit, covered, for another 5-10 minutes to steam.
