Laap, also spelled as Larb, is a traditional dish from Laos known for its vibrant flavors and fresh ingredients. 1 lb ground meat (pork, chicken, or beef)

2 shallots, finely chopped

3-4 green onions, thinly sliced

2-3 tablespoons fish sauce

Juice of 2-3 limes

1 tablespoon roasted rice powder

1-2 teaspoons chili flakes (adjust to taste)

Handful of fresh cilantro, chopped

Handful of fresh mint leaves, chopped

Handful of fresh Thai basil leaves, chopped

Lettuce leaves, for serving

Sticky rice or steamed jasmine rice, for serving


In a skillet over medium heat, cook the ground meat until fully browned and cooked through. Drain any excess fat if necessary. In a large mixing bowl, combine the cooked meat, shallots, green onions, fish sauce, lime juice, roasted rice powder, and chili flakes. Mix well to combine. Add the chopped cilantro, mint leaves, and Thai basil leaves to the bowl, reserving some for garnish. Toss to incorporate. Taste and adjust the seasoning, adding more fish sauce, lime juice, or chili flakes as desired. To serve, arrange lettuce leaves on a platter and spoon the Laap mixture on top. Garnish with additional herbs and serve with sticky rice or steamed jasmine rice on the side.
