Prepare the Potatoes
Boil the potatoes in salted water for 10–15 minutes until just tender but still firm. Drain and let them cool completely. For a more authentic texture, chill the potatoes in the fridge for a few hours or overnight.

Grate the Potatoes
Coarsely grate the cooled potatoes using a box grater or food processor. If using onions, grate or finely chop them and mix with the potatoes. Season with salt and black pepper.

Cook the Rösti
Heat butter or oil in a large non-stick skillet over medium heat. Add the grated potatoes, pressing them gently into an even layer. Cook for 10–15 minutes until the bottom is golden brown and crispy. Carefully flip the Rösti using a plate or spatula, then cook the other side for another 10–15 minutes until golden and cooked through.
