Rösti (Swiss Potato Pancakes)

Enjoy the simple yet comforting flavors of Swiss cuisine with Rösti, a crispy and golden potato dish that can be served as a side or a main. Perfectly crunchy on the outside and tender inside, Rösti is a versatile recipe that pairs beautifully with eggs, cheese, meats, or vegetables.

Ingredients

  • 4 large potatoes, peeled
  • 2 tablespoons butter or vegetable oil
  • Salt, to taste
  • Black pepper, to taste
  • Optional: 1 small onion, finely chopped
  • Optional: 2 tablespoons grated cheese

Instructions

  1. Prepare the Potatoes

    Boil the potatoes in salted water for 10–15 minutes until just tender but still firm. Drain and let them cool completely. For a more authentic texture, chill the potatoes in the fridge for a few hours or overnight.

  2. Grate the Potatoes

    Coarsely grate the cooled potatoes using a box grater or food processor. If using onions, grate or finely chop them and mix with the potatoes. Season with salt and black pepper.

  3. Cook the Rösti

    Heat butter or oil in a large non-stick skillet over medium heat. Add the grated potatoes, pressing them gently into an even layer. Cook for 10–15 minutes until the bottom is golden brown and crispy. Carefully flip the Rösti using a plate or spatula, then cook the other side for another 10–15 minutes until golden and cooked through.

  4. Optional Additions

    Sprinkle grated cheese over the Rösti in the last few minutes of cooking for a cheesy variation.

  5. Serve

    Slide the Rösti onto a serving plate and cut into wedges. Serve hot as a side to meats, eggs, or vegetables, or enjoy it as a standalone dish.
