Rødgrød med fløde is a classic Danish dessert made from a variety of summer berries, cooked down to a smooth, sweet compote. Traditionally served with a splash of rich cream, this dessert is simple yet bursting with flavor, capturing the essence of Denmark’s summer harvest in every bite.

Ingredients

For the Rødgrød:

1 ½ lbs (680 g) mixed berries (strawberries, raspberries, red currants, blackberries)

1 cup (200 g) sugar

2 cups (500 ml) water

2 tbsp cornstarch (optional for thickening)

¼ cup (60 ml) cold water (for cornstarch mixture)

For Serving:

1 cup (250 ml) heavy cream or whole milk

Instructions

Prepare the Berries: Wash and hull the strawberries if using. Combine all the mixed berries in a large saucepan. Add the water and sugar to the pan and bring to a gentle boil over medium heat.

Simmer the Berries: Reduce the heat and let the berries simmer for 10-15 minutes, stirring occasionally until the fruit breaks down and the mixture thickens slightly.

Thicken the Mixture: For a thicker texture, mix the cornstarch with cold water until smooth. Slowly pour the cornstarch slurry into the simmering berries while stirring constantly. Continue cooking for another 2-3 minutes until the mixture thickens to your desired consistency.

Cool the Rødgrød: Remove the pan from heat and let the rødgrød cool to room temperature. You can refrigerate it for a few hours if you prefer it chilled.

Serve with Cream: Serve the rødgrød in bowls, drizzling cold heavy cream or milk over the top. You can also garnish it with extra fresh berries for a lovely presentation.
