2 lb chicken, cut into pieces

2 ripe plantains, peeled and sliced

2 tomatoes, diced

1 onion, chopped

2 bell peppers (1 red, 1 green), sliced

3 cloves garlic, minced

1-inch piece of ginger, grated

1/2 cup chicken broth

2 tablespoons tomato paste

1 teaspoon paprika

1 teaspoon thyme

Salt and pepper to taste

Vegetable oil for frying


Heat some vegetable oil in a large skillet over medium heat. Fry the plantain slices until golden brown, then transfer to a paper towel-lined plate to drain excess oil. In the same skillet, add more oil if needed, then brown the chicken pieces on all sides. Remove and set aside. In the same skillet, sauté the chopped onion, minced garlic, and grated ginger until fragrant. Add the diced tomatoes and sliced bell peppers to the skillet. Cook until softened. Stir in the tomato paste, paprika, and thyme, then pour in the chicken broth. Bring to a simmer. Return the chicken pieces to the skillet, cover, and let simmer for about 20-25 minutes, or until the chicken is cooked through and tender. Once the chicken is cooked, add the fried plantains to the skillet and gently stir to combine. Cook for an additional 5 minutes to allow the flavors to meld. Season with salt and pepper to taste.
