Ingredients:
Main Ingredients:
1 lb (0.45 kg) pork belly or shoulder, thinly sliced
0.5 lb (0.23 kg) white radish or daikon, thinly sliced
2 tablespoons vegetable oil
1 tablespoon ginger, minced
1 teaspoon garlic, minced
2 tablespoons chili powder (adjust to taste)
1 teaspoon Sichuan pepper (optional)
2 cups (0.5 L) water or pork stock
Optional:
0.25 lb (0.11 kg) green onions, chopped
1 teaspoon salt (adjust to taste)
Instructions:
Step 1: Prepare the Ingredients Thinly slice the pork belly into bite-sized pieces. Slice the radish into thin rounds or strips.
Step 2: Sauté the Pork Heat the vegetable oil in a medium pot over medium heat. Add the pork slices and cook until lightly browned and most of the fat has rendered, about 5-7 minutes.
Step 3: Add Aromatics and Spices Stir in the minced ginger and garlic, cooking for 1-2 minutes until fragrant. Sprinkle in the chili powder and Sichuan pepper (if using), stirring to coat the pork evenly.
Step 4: Simmer with Radish Add the sliced radish and mix well with the pork and spices. Pour in the water or pork stock, bring to a boil, and then reduce to a simmer. Cover and cook for 15-20 minutes, or until the radish is tender and the flavors meld together.
Step 5: Finish the Dish Taste and adjust the salt as needed. If using green onions, stir them in during the last 2-3 minutes of cooking for a fresh finish.
Serving: Serve Phaksha Paa hot with a side of steamed white or red rice. Its rich flavors pair beautifully with the neutral taste of rice, making it a balanced and satisfying meal.
