Peka is a traditional Croatian dish that is slow-cooked under a metal lid covered with embers. Ingredients

2.2 lb (1 kg) lamb or veal (or a mix), cut into chunks

1.5 lb (700 g) potatoes, peeled and sliced

1 red bell pepper, chopped (0.3 lb / 135 g)

3 cloves garlic, minced

1/4 cup (60 ml) olive oil

1 cup (240 ml) white wine

1 tsp dried rosemary

1 tsp dried thyme

1/2 tsp ground black pepper

Salt to taste

Fresh parsley for garnish (optional)

Instructions

Prepare the Ingredients: Preheat the oven to 350°F (180°C). Season the meat generously with salt and pepper. In a large roasting dish, arrange the sliced potatoes, carrots, onion, bell pepper, and minced garlic. Drizzle with olive oil and season with rosemary and thyme.

Add the Meat: Place the seasoned meat on top of the vegetables, ensuring even distribution. Pour the white wine over the entire dish to help with moisture and flavor during cooking.

Cover and Cook: Cover the roasting dish with a lid or aluminum foil. Place it in the preheated oven and cook for about 2 to 2.5 hours, basting occasionally with its own juices. The meat should be tender and the vegetables soft.

Finish Under High Heat: For the last 10-15 minutes of cooking, remove the lid and increase the oven temperature to 400°F (200°C) to allow the meat to brown slightly. This will give the dish a beautiful golden finish.
