4 large Egg Whites

1 cup (200g) White Sugar

1 tsp White Vinegar

1 tsp Vanilla Extract

1 tsp Cornstarch

1 cup (240ml) Heavy Cream

Assorted Fresh Fruits (Berries, Kiwi, Passionfruit)

Mint Leaves (for garnish)


Preheat your oven to 300°F (150°C) and line a baking sheet with parchment paper. In a clean, dry bowl, whip egg whites until stiff peaks form. Gradually add sugar, one tablespoon at a time, while continuing to whip until the meringue is glossy. Mix in white vinegar, vanilla extract, and cornstarch, folding gently to combine. Spoon the meringue onto the prepared baking sheet, forming a nest shape. Create a slight well in the center of the pavlova to hold the filling. Bake for about 1 hour or until the pavlova is crisp on the outside and marshmallow-like on the inside. Allow the pavlova to cool completely.


Whip the heavy cream until stiff and fill the pavlova nest with the cream. Top with assorted fresh fruits and garnish with mint leaves for a burst of color.
