Ingredients:

2 cups (1 lb or 0.45 kg) bitter leaves (or spinach)

1 cup (0.5 lb or 0.23 kg) peanuts (groundnuts)

1 lb (0.45 kg) beef or fish (or a mix)

1 cup (0.5 lb or 0.23 kg) shrimp

1 onion, chopped (0.25 lb or 0.11 kg)

2 cloves garlic, minced (0.05 lb or 0.023 kg)

1 bell pepper, chopped (0.25 lb or 0.11 kg)

2 tomatoes, chopped (0.5 lb or 0.23 kg)

1/4 cup (0.13 lb or 0.057 kg) palm oil or vegetable oil

1 stock cube

Salt and pepper to taste

Water as needed

Instructions:

Prepare the Bitter Leaves:

If using fresh bitter leaves, wash them thoroughly and boil until tender, then drain and chop finely. If using spinach, simply chop and set aside.

Cook the Peanuts:

Boil the peanuts until soft, then blend into a smooth paste using a food processor or blender. Add a little water if necessary to achieve a creamy consistency.

Cook the Meat/Fish:

In a large pot, heat the oil over medium heat. Add the chopped onion, garlic, and bell pepper. Sauté until the onions are translucent. Add the beef or fish and cook until browned. If using both, cook the beef first, then add the fish later to avoid overcooking.

Combine Ingredients:

Add the chopped tomatoes to the pot and cook until they break down and form a sauce. Stir in the peanut paste, mixing well with the tomato sauce. Add the stock cube, salt, and pepper, then pour in enough water to create a thick stew. Bring to a simmer.

Add Bitter Leaves and Shrimp:

Stir in the prepared bitter leaves or spinach and the shrimp. Simmer for about 10-15 minutes, until the shrimp are cooked through and the flavors have melded.

Serving:

Serve Ndole hot, accompanied by boiled plantains, rice, or fufu. This dish is best enjoyed as a main course and is perfect for sharing with family and friends.
