Ingredients:

For the Rice:

2 cups (1 kg) jasmine rice

4 cups (1 liter) water

1 teaspoon (5 g) salt

1 lb (500 g) chicken pieces

1 cup (250 ml) coconut milk

1 tablespoon (15 ml) cooking oil

2 shallots (30 g), minced

2 cloves garlic (10 g), minced

1 teaspoon (5 g) turmeric powder

1 teaspoon (5 g) coriander powder

1 teaspoon (5 g) salt

For the Sides:

1 lb (500 g) fried tempeh

1 lb (500 g) fried tofu

½ lb (250 g) fried chicken

1 cup (250 g) sambal sauce

1 cup (200 g) shredded coconut (kerisik)

Instructions:

Cook the Rice: Rinse the rice under cold water until the water runs clear. Combine rice, water, and salt in a rice cooker or pot. Cook until soft and fluffy.

Prepare the Main Curry: Heat oil in a pot and sauté shallots and garlic until fragrant. Add chicken, turmeric powder, coriander powder, and salt. Stir until the chicken is coated. Pour in the coconut milk and simmer on low heat for 20-25 minutes until the chicken is tender.

Prepare the Sides: Fry tempeh, tofu, and chicken until golden brown. Prepare sambal sauce (store-bought or homemade). Toast shredded coconut in a dry pan until golden brown for kerisik.

Assemble the Platter: Place the rice in the center of a large serving tray. Arrange the chicken curry, fried tempeh, tofu, chicken, sambal, and kerisik around it.

Serving: Nasi Ambeng is traditionally served family-style on a large platter. It’s meant to be shared by 4-6 people, emphasizing the spirit of togetherness. Pair it with iced tea for a refreshing accompaniment.
