Nasi Lemak (Malaysian Coconut Rice)

Ingredients
For the Coconut Rice:
- 2 cups jasmine rice
- 1 1/2 cups coconut milk
- 1 1/2 cups water
- 2 pandan leaves, tied in a knot
- 1/2 teaspoon salt
For the Sambal:
- 2 tablespoons vegetable oil
- 1 large onion, finely sliced
- 3 cloves garlic, minced
- 1 teaspoon shrimp paste (optional)
- 8 dried red chilies, soaked and blended into a paste
- 1 tablespoon tamarind paste
- 1 tablespoon sugar
- Salt to taste
For the Accompaniments:
- 4 hard-boiled eggs, halved
- 1/2 cup roasted peanuts
- 1/2 cup crispy fried anchovies (ikan bilis)
- Cucumber slices for garnish

Cook the Coconut Rice
Rinse the jasmine rice until the water runs clear. Combine rice, coconut milk, water, pandan leaves, and salt in a rice cooker or pot. Cook over medium heat until the rice is tender and fluffy. Remove pandan leaves before serving.

Prepare the Sambal
Heat oil in a pan over medium heat. Sauté onion and garlic until fragrant. Add shrimp paste (if using) and cook for 1–2 minutes. Stir in the chili paste and cook for 5–7 minutes until the oil separates. Add tamarind paste, sugar, and salt. Simmer for another 5 minutes, stirring occasionally.

Prepare the Accompaniments
Fry the anchovies until golden and crispy, then drain on paper towels. Roast the peanuts until lightly browned. Boil eggs, peel, and cut in halves. Slice cucumber into thin rounds.

Plate a mound of coconut rice. Add sambal, boiled eggs, roasted peanuts, crispy anchovies, and cucumber slices on the side.
