Krendel Recipe

Krendel

Krendel is a traditional Eastern European sweet bread, often shaped into a twisted or ring-like form. This festive pastry, popular in Russia, Belarus, and Ukraine, features a soft, fluffy dough with a deliciously spiced filling of nuts, cinnamon, and dried fruits. Krendel is perfect for holidays or special occasions, served warm with tea or coffee.

Ingredients

For the Dough:
  • 1.1 lb (500 g) all-purpose flour
  • ¼ cup (50 g) sugar
  • 1 teaspoon salt
  • 2 ¼ teaspoons (7 g) dry yeast
  • ½ cup (120 ml) warm milk
  • 2 eggs
  • ¼ cup (60 g) butter, melted
For the Filling:
  • ½ cup (75 g) walnuts or almonds, chopped
  • ½ cup (100 g) raisins or dried apricots, chopped
  • ¼ cup (50 g) sugar
  • 1 teaspoon cinnamon
  • 2 tablespoons honey
For Brushing:
  • 1 egg yolk + 1 tablespoon milk (for egg wash)

Instructions

  1. Step 1: Prepare the Dough

In a small bowl, mix the warm milk with yeast and a teaspoon of sugar. Let it sit for 10 minutes until foamy. In a large bowl, combine flour, remaining sugar, and salt. Add the yeast mixture, eggs, and melted butter to the flour. Mix until a dough forms. Knead the dough for about 10 minutes until smooth. Cover and let it rise in a warm place for 1–1.5 hours or until doubled in size.

  2. Step 2: Prepare the Filling

In a bowl, mix chopped nuts, dried fruits, sugar, cinnamon, and honey. Set aside.

  3. Step 3: Shape the Krendel

Roll out the risen dough into a rectangle about ¼ inch (0.5 cm) thick. Spread the filling evenly over the dough. Roll the dough into a log and twist it into a spiral or horseshoe shape. Place on a baking sheet lined with parchment paper. Cover and let it rest for 20 minutes.

  4. Step 4: Bake the Krendel

Preheat the oven to 350°F (180°C). Brush the dough with the egg wash. Bake for 25–30 minutes or until golden brown.

Serving

Serve Krendel warm or at room temperature, dusted with powdered sugar or drizzled with glaze. It pairs perfectly with tea or coffee.
