Ingredients

  • 8 oz rice vermicelli noodles
  • 1 lb chicken, shredded (or pork/beef as preferred)
  • 2 tablespoons red curry paste
  • 1 can (14 oz) coconut milk
  • 4 cups chicken broth
  • 1 tablespoon fish sauce
  • 1 teaspoon sugar
  • 1 cup bean sprouts
  • 1/2 cup fresh mint leaves
  • 1/2 cup cilantro leaves
  • 2 green onions, sliced
  • 1-2 red chilies, thinly sliced (optional, for garnish)
  • Lime wedges, for serving

Instructions

  1. Prepare the Broth

In a large pot, heat a small amount of oil over medium heat. Add the red curry paste and cook for 1–2 minutes until fragrant. Stir in the coconut milk and chicken broth, bringing the mixture to a gentle simmer.

  2. Cook the Chicken

Add the shredded chicken to the simmering broth. Season with fish sauce and sugar. Simmer for 10–15 minutes to allow the flavors to meld and the chicken to heat through.

  3. Prepare the Noodles

Cook the rice vermicelli noodles according to package instructions, then drain and set aside.

  4. Assemble the Soup

Divide the cooked noodles into serving bowls. Ladle the hot coconut curry broth and chicken over the noodles.

  5. Garnish and Serve

Top each bowl with bean sprouts, fresh mint, cilantro, green onions, and sliced red chilies. Serve with lime wedges on the side for squeezing over the soup.

Serving

Enjoy Khao Poon as a satisfying main course or as part of a Southeast Asian-inspired meal. Its aromatic and spicy broth, tender chicken, and fresh herb toppings create a symphony of flavors that will delight your palate with every bite.
