Ingredients:
4 ripe plantains
1 cup cooked black beans
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
Pinch of salt
Vegetable oil, for frying

Instructions:
Peel the ripe plantains and cut them into chunks. Boil them in water until they are soft, then drain and mash them in a bowl. In another bowl, mash the cooked black beans with brown sugar, ground cinnamon, and a pinch of salt until you have a smooth paste. Take a small portion of the mashed plantains and flatten it into a disc in the palm of your hand. Place a spoonful of the sweetened black bean paste in the center of the plantain disc. Fold the edges of the plantain disc over the filling to enclose it completely, shaping it into a ball. Repeat the process with the remaining plantains and filling. Heat vegetable oil in a frying pan over medium heat. Fry the filled plantain balls until they are golden brown and crispy on all sides. Remove the Rellenitos from the oil and drain them on paper towels to remove excess oil.
