Haleem (Slow-Cooked South Asian Meat & Lentil Porridge)

Ingredients
- 1 cup wheat (soaked for 2 hours)
- 1/2 cup barley
- 1/4 cup chana dal (split chickpeas)
- 1/4 cup masoor dal (red lentils)
- 1/4 cup moong dal (split yellow lentils)
- 500g boneless meat (beef, mutton, or chicken)
- 2 large onions, thinly sliced
- 2 tablespoons ginger-garlic paste
- 3-4 green chilies, chopped
- 1/2 cup yogurt
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- 1/2 cup oil or ghee
- Salt to taste
- 6-8 cups water
- Fresh coriander leaves, chopped (for garnish)
- Fried onions (for garnish)
- Lemon wedges (for serving)

Prepare the Grains and Lentils
Soak wheat and barley for at least 2 hours. Wash and rinse all lentils. In a large pot, combine wheat, barley, lentils, and 6-8 cups of water. Cook until soft, stirring occasionally.

Cook the Meat
Heat oil or ghee in a separate pan over medium heat. Fry sliced onions until golden brown. Add ginger-garlic paste and sauté for a minute. Add the meat and cook until browned on all sides. Mix in turmeric, red chili powder, coriander powder, and salt. Cook for 5-10 minutes.

Combine and Slow Cook
Add the cooked meat to the pot of softened grains and lentils. Mix in yogurt and green chilies. Cover and simmer on low heat for 2-3 hours, stirring occasionally to prevent sticking. The mixture should become thick and porridge-like.

Once the mixture is tender, use a hand blender or masher to achieve a smooth, creamy consistency. Stir in garam masala and adjust salt and spices to taste.
