1/2 lb (0.23 kg) zucchini, diced

1/2 lb (0.23 kg) eggplant, diced

1 onion, finely chopped

2 cloves garlic, minced

2 tomatoes, chopped

1/4 cup (60 ml) vegetable oil

1 teaspoon sweet paprika

1 teaspoon dried thyme

Salt and pepper to taste
