Ingredients
2 cups (1 lb or 0.45 kg) dried fava beans, soaked overnight
4 cloves garlic, minced
1/4 cup (60 ml) extra virgin olive oil
1/4 cup (60 ml) lemon juice
1 tsp (5 g) ground cumin
1/2 tsp (2.5 g) ground coriander
Salt, to taste
Pepper, to taste
Optional toppings: chopped parsley, chopped tomatoes, chopped onions, hard-boiled eggs, chili flakes
Instructions
Cook the Fava Beans: Drain the soaked fava beans and place them in a large pot. Cover with fresh water, about 2 inches above the beans. Bring to a boil, then reduce the heat to low, cover, and simmer for 1.5 to 2 hours, or until the beans are very tender. Stir occasionally and add more water if necessary to keep the beans covered.
Season the Beans: Once the beans are cooked, drain any excess water, leaving just a little to keep the beans moist. Mash some of the beans with the back of a spoon to create a slightly chunky consistency. Stir in the minced garlic, olive oil, lemon juice, ground cumin, and ground coriander. Season with salt and pepper to taste.
Warm the Mixture: Return the pot to low heat and cook the mixture for an additional 10 minutes, stirring occasionally to allow the flavors to meld together. If the mixture is too thick, you can add a little water to achieve your desired consistency.
