2 lb (0.9 kg) goat or beef, cut into bite-sized pieces

2 tbsp (30 ml) vegetable oil
1 tsp (5 g) ground cumin
1 tsp (5 g) ground coriander

1 tsp (5 g) black pepper
2 bay leaves
Salt, to taste
1/4 cup (60 g) fresh cilantro, chopped (for garnish)
1 lime, cut into wedges (for serving)
Instructions
Prepare the Meat: In a large pot, heat the vegetable oil over medium heat. Add the meat pieces and cook until browned on all sides, about 5-7 minutes. Remove the meat and set it aside.
Sauté the Aromatics: In the same pot, add the chopped onions, garlic, and green chilies. Sauté until the onions are soft and translucent, about 5 minutes. Add the cumin, coriander, turmeric, and black pepper. Stir and cook for another 2 minutes until the spices are fragrant.
Add Vegetables and Simmer: Return the browned meat to the pot. Add the diced tomatoes, potatoes, carrots, and bay leaves. Pour in the water, stirring to combine all ingredients. Bring the mixture to a boil, then reduce the heat to low. Cover and let the soup simmer for 1 to 1.5 hours, or until the meat is tender and the vegetables are cooked through.
Season to Taste: Taste the soup and adjust the seasoning with salt and more black pepper if needed. If the soup is too thick, you can add a little more water to reach your desired consistency.
