Esh Asarya (Palace Bread)

Esh Asarya is a luxurious no-bake dessert cherished across the Arab world, especially in the Levant and Egypt. Its name translates to "Palace Bread," reflecting its royal origins. This indulgent treat features a base of sweetened bread soaked in aromatic syrup, layered with rich clotted cream (ashta), and garnished with crunchy pistachios. Perfect for special occasions like Ramadan or festive gatherings, Esh Asarya offers a delightful blend of textures and flavors.

Ingredients

  • 6 slices white bread (preferably stale or toasted)
  • 2 cups sugar
  • 2 cups water
  • 1 tablespoon rose water
  • 1 tablespoon orange blossom water
  • 1 tablespoon lemon juice
  • 3 cups heavy whipping cream
  • 1 cup whole milk
  • 1 tablespoon cornstarch
  • 1 tablespoon all-purpose flour
  • ¼ cup crushed pistachios (for garnish)

Instructions

  1. Prepare the Syrup

    In a saucepan, combine sugar and water. Bring to a boil over medium heat, stirring until the sugar dissolves. Reduce the heat and simmer for 10 minutes until slightly thickened. Remove from heat and stir in rose water, orange blossom water, and lemon juice. Set aside to cool.

  2. Prepare the Bread Base

    Remove the crusts from the bread slices and cut or tear the bread into small pieces. Place the bread pieces in a shallow dish. Pour the cooled syrup over the bread, ensuring all pieces are soaked. Press gently to compact the bread and set aside.

  3. Make the Ashta (Clotted Cream)

    In a saucepan, combine heavy whipping cream, whole milk, cornstarch, and flour. Cook over medium heat, stirring constantly until the mixture thickens to a custard-like consistency. Once thickened, remove from heat and let it cool slightly.

  4. Assemble the Dessert

    Pour the prepared ashta over the soaked bread base, spreading evenly to cover. Smooth the top with a spatula. Sprinkle crushed pistachios evenly over the top for garnish.

  5. Serve

    Cover the dish and refrigerate for at least 4 hours, preferably overnight, to allow the flavors to meld and the dessert to set. Serve chilled, cutting into squares or slices as desired.
