1 tsp turmeric powder

For the Stir-Fry:

1 lb (450 g) beef, thinly sliced

2 tbsp (30 ml) fish sauce

1 tbsp (15 ml) soy sauce

1 tbsp (15 ml) oyster sauce

1 tbsp (15 g) sugar

1 red bell pepper, sliced

1 cup (240 g) green beans, trimmed

2 tbsp (30 ml) vegetable oil

Instructions:

Prepare the Kroeung Paste: Blend or pound the lemongrass, garlic, galangal, lime leaves, shallot, and turmeric into a fine paste using a mortar and pestle or food processor. Set aside.

Marinate the Beef: In a bowl, combine the beef with 1 tbsp fish sauce, 1 tbsp soy sauce, and sugar. Let marinate for 15–20 minutes.

Cook the Vegetables: Heat 1 tbsp of vegetable oil in a wok or large skillet over medium heat. Add the green beans and red bell pepper, stir-frying for 3–4 minutes. Remove and set aside.

Cook the Beef: Add the remaining oil to the wok. Stir-fry the kroeung paste until fragrant, about 2 minutes. Add the marinated beef and cook until browned, about 5–7 minutes.

Combine: Return the vegetables to the wok, add the oyster sauce and the remaining fish sauce, and stir until everything is well-coated and heated through.

Serving: Serve Cha Kroeung Sach Ko hot with steamed jasmine rice. Garnish with fresh herbs like cilantro for an added touch of freshness.
