Instructions
Cook the Rice and Beans: Rinse the rice under cold water. In a pot, heat the vegetable oil, add the rice, and toast it lightly. Add water and salt, then bring to a boil. Reduce heat, cover, and simmer for about 20 minutes or until the rice is cooked. In a separate pot, heat the black beans and season them to taste.
Prepare the Protein: In a pan, heat olive oil over medium heat. Season the chicken or beef with minced garlic, paprika, salt, and pepper. Cook until the meat is fully cooked (about 6-7 minutes per side for chicken or until desired doneness for beef). For fish, cook for about 4-5 minutes per side, depending on thickness.
Fry the Plantains: In a separate pan, heat oil and fry the sliced plantains until golden brown on each side (about 2-3 minutes per side). Remove and drain on paper towels.
