Ingredients:

For the Skewers:

1 lb (500 g) beef, chicken, or lamb, cut into 1-inch cubes

2 medium bell peppers, cut into 1-inch pieces

1 medium onion, cut into wedges

1 medium zucchini, sliced

8 cherry tomatoes

Marinade:

2 tablespoons (30 ml) olive oil

1 tablespoon (15 ml) soy sauce

2 cloves garlic, minced

1 teaspoon (5 g) paprika

1 teaspoon (5 g) ground cumin

½ teaspoon (2.5 g) black pepper

1 teaspoon (5 g) salt

Optional:

1 lemon, cut into wedges for serving

Instructions:

Prepare the Marinade: In a large bowl, combine olive oil, soy sauce, garlic, paprika, cumin, black pepper, and salt.

Marinate the Meat: Add the cubed meat to the marinade and toss to coat. Cover and refrigerate for at least 1 hour or overnight for deeper flavor.

Assemble the Skewers: Alternate threading marinated meat, bell peppers, onions, zucchini, and cherry tomatoes onto skewers. Leave a little space between each piece for even cooking.

Grill the Brochettes: Preheat a grill or grill pan over medium-high heat. Cook the skewers for 10–12 minutes, turning occasionally, until the meat is cooked to your desired doneness and the vegetables are tender.

Optional Step: Squeeze lemon juice over the skewers before serving for an extra burst of flavor.

Serving: Serve the brochettes hot with a side of rice, salad, or flatbread. These skewers make about 4 servings, perfect for a family meal or a barbecue party.
