1 lb ground beef

1 onion, finely chopped

2 cloves garlic, minced

1 bell pepper, diced

1 cup rice

2 cups chicken or vegetable broth

1 can (14 oz) diced tomatoes

2 tablespoons tomato paste

1 teaspoon ground cumin

Salt and pepper to taste

Chopped fresh cilantro for garnish

In a large skillet, cook the ground beef over medium heat until browned. Add the onion, garlic, bell pepper, carrot, and zucchini, and cook until the vegetables are softened. Stir in the rice, diced tomatoes, tomato paste, ground cumin, paprika, salt, and pepper. Pour in the chicken or vegetable broth and bring the mixture to a simmer. Cover the skillet and let the Subanik simmer for about 20-25 minutes, or until the rice is cooked and the liquid is absorbed.
