1 tablespoon soy sauce

1 tablespoon kecap manis (sweet soy sauce)

1 tablespoon tamarind paste

1 teaspoon palm sugar or brown sugar

1/2 cup coconut milk

Water, as needed

Salt and pepper to taste


In a bowl, combine soy sauce, kecap manis, vegetable oil, minced garlic, ground coriander, ground cumin, turmeric powder, brown sugar, salt, and pepper. Mix well to make the marinade. Add the chicken pieces to the marinade, making sure they are evenly coated. Cover and refrigerate for at least 1 hour, or overnight for best results. Meanwhile, prepare the peanut sauce. In a saucepan, combine ground peanuts, minced garlic, soy sauce, kecap manis, tamarind paste, palm sugar, and coconut milk. Cook over low heat, stirring constantly, until the sauce thickens. Add water as needed to achieve the desired consistency. Season with salt and pepper to taste. Thread the marinated chicken pieces onto the soaked wooden skewers. Preheat the grill or grill pan to medium-high heat. Grill the chicken skewers for 3-4 minutes on each side, or until cooked through and slightly charred. Serve the grilled Sate Ayam hot with the peanut sauce on the side for dipping.
