2 cups Grated Cassava

1 cup Water

1 cup Sugar

1 tsp Pandan Extract (optional, for flavor)

Grated Coconut for coating


In a bowl, combine grated cassava and water. Mix well to create a smooth batter. In a separate saucepan, dissolve sugar in water over low heat. Add pandan extract if desired. Pour the sugar mixture into the cassava batter and stir until well combined. Strain the batter to remove any lumps. Grease individual pichi-pichi molds and pour the batter into each mold. Steam the molds for about 30-40 minutes or until the pichi-pichi becomes translucent and firm. Let it cool before unmolding and rolling each piece in grated coconut.
