2 lbs (0.9 kg) boneless meat (such as pork, beef, or lamb), cut into cubes

1 onion, finely chopped

3 cloves garlic, minced

1/4 cup olive oil

1/4 cup white wine vinegar

2 tablespoons fresh lemon juice

1 teaspoon ground coriander

1 teaspoon ground cumin

1 teaspoon paprika

Salt and pepper to taste

Fresh parsley or cilantro for garnish

In a mixing bowl, combine the chopped onion, minced garlic, olive oil, white wine vinegar, lemon juice, ground coriander, ground cumin, paprika, salt, and pepper. Mix well to create the marinade. Place the cubed meat in a shallow dish or resealable plastic bag. Pour the marinade over the meat, ensuring that it is evenly coated. Cover the dish or seal the bag, and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to develop. Preheat your grill to medium-high heat. Thread the marinated meat onto skewers, dividing evenly. Grill the skewers of meat on the preheated grill, turning occasionally, until the meat is cooked through and has developed a nice charred exterior, about 10-15 minutes. Once cooked, remove the skewers from the grill and let them rest for a few minutes. Garnish the Mtsvadi with fresh parsley or cilantro before serving.
