2 lbs (0.9 kg) boneless meat (such as pork, beef, or lamb), cut into cubes
1 onion, finely chopped
3 cloves garlic, minced
1/4 cup olive oil
1/4 cup white wine vinegar
2 tablespoons fresh lemon juice

Salt and pepper to taste

Instructions:
In a mixing bowl, combine the chopped onion, minced garlic, olive oil, white wine vinegar, lemon juice, ground coriander, ground cumin, paprika, salt, and pepper. Mix well to create the marinade. Place the cubed meat in a shallow dish or resealable plastic bag. Pour the marinade over the meat, ensuring that it is evenly coated. Cover the dish or seal the bag, and refrigerate for at least 4 hours, or preferably overnight, to allow the flavors to develop. Preheat your grill to medium-high heat.
