Ingredients:

For the Mussels:

4 lbs (1.8 kg) fresh mussels, cleaned

1 cup (240 ml) dry white wine

2 tablespoons (28 g) butter

1 large onion, chopped

3 garlic cloves, minced

1 celery stalk, sliced

1 bay leaf

½ teaspoon black pepper

¼ cup (15 g) fresh parsley, chopped

For the Fries:

2 lbs (0.9 kg) russet potatoes, peeled and cut into fries

1 quart (1 liter) vegetable oil for frying

Salt to taste

Instructions:

Step 1: Prepare the Fries Soak the potato fries in cold water for at least 30 minutes to remove excess starch. Heat oil in a deep fryer or large pot to 325°F (163°C). Drain and pat the fries dry, then fry them in batches for about 3–4 minutes until soft but not browned. Remove and let them rest on a paper towel.

Step 2: Cook the Mussels In a large pot, melt butter over medium heat. Add the chopped onion, garlic, and celery, and sauté until soft. Pour in the white wine, add the bay leaf and black pepper, and bring to a simmer. Add the mussels, cover the pot, and cook for 5–7 minutes, shaking the pot occasionally, until the mussels open. Discard any that remain closed. Sprinkle with fresh parsley before serving.

Step 3: Fry the Potatoes Again Heat the oil to 375°F (190°C). Fry the partially cooked potatoes again for 2–3 minutes until golden and crispy. Drain and season with salt.

Serving: Serve the mussels in a large bowl with their broth and crispy fries on the side. Pair with mayonnaise or aioli for dipping.
