Ingredients:
2 cups (0.5 lb / 225 g) all-purpose flour
1 teaspoon baking powder
½ teaspoon salt
1 tablespoon vegetable oil or butter
½ cup (120 ml) water or milk
1 teaspoon sugar (optional)

Instructions:
Step 1: Prepare the Dough In a large bowl, mix the flour, baking powder, salt, and sugar (if using). Add the vegetable oil or butter and gradually pour in the water or milk while mixing. Knead the dough for about 5 minutes until smooth and elastic. Cover with a cloth and let it rest for 15–20 minutes.
Step 2: Shape the Fry Jacks Divide the dough into small balls and roll each one into a thin circle or triangle. You can leave them whole or make a small slit in the middle to prevent puffing too much.
Step 3: Fry to Perfection Heat oil in a deep pan to 350°F (175°C). Fry each piece for about 30–60 seconds per side until golden brown and puffed. Remove and drain on paper towels.
