Dish recipes: Dim Sum

Dim Sum, the iconic Chinese dish, features small bite-sized dumplings filled with an array of ingredients, from shrimp and pork to vegetables. Often served in bamboo steamers, Dim Sum is perfect for sharing and brings a delightful mix of flavors and textures. Here’s a recipe to make authentic Dim Sum at home.

Ingredients

For Dumpling Dough

2 cups (250 g) all-purpose flour

3/4 cup (180 ml) hot water

1/4 tsp (1 g) salt

For Filling

0.5 lb (225 g) ground pork or shrimp (or a combination)

1/4 cup (40 g) chopped green onions

2 tbsp (30 ml) soy sauce

1 tbsp (15 ml) sesame oil

1 tbsp (8 g) minced garlic

1 tbsp (8 g) minced ginger

1/4 cup (40 g) water chestnuts, chopped

Salt and pepper, to taste

Instructions

Make the Dough In a large mixing bowl, combine flour and salt. Gradually add hot water, mixing until the dough begins to form. Knead the dough for 5-7 minutes until smooth. Cover and let rest for 30 minutes.

Prepare the Filling In another bowl, mix ground pork (or shrimp), green onions, soy sauce, sesame oil, garlic, ginger, and chopped water chestnuts. Season with salt and pepper to taste, and combine until evenly mixed.

Form the Dumplings Roll the dough into a log and cut it into small pieces (about 1 inch or 2.5 cm each). Roll each piece into a small ball, then flatten it into a thin circle about 3 inches (7.5 cm) in diameter. Place a spoonful of filling in the center of each dough circle. Fold and pinch the edges to seal the dumplings.

Steam the Dumplings Line a bamboo steamer with parchment paper or cabbage leaves to prevent sticking. Place dumplings in the steamer, ensuring they don’t touch. Steam over boiling water for 10-12 minutes until the filling is cooked and dumplings are translucent.

Serving

Serve Dim Sum hot with a side of soy sauce or chili oil for dipping, garnished with extra green onions if desired.

Making Dim Sum at home may seem challenging, but the process is rewarding and brings authentic Chinese flavors to your table. Perfect for any gathering, Dim Sum can be enjoyed with family or friends, creating an experience that goes beyond just a meal.
