Ingredients

For the Dough

2 cups (250 g) all-purpose flour

3/4 cup (180 ml) water

For the Filling

0.5 lb (225 g) ground pork

1/4 cup (60 ml) chicken broth, chilled

1 tbsp (15 ml) soy sauce

1 tbsp (15 ml) Shaoxing wine (optional)

1/2 tsp (2.5 g) sugar

1/2 tsp (2.5 g) salt

1/2 tsp (2.5 g) sesame oil

1/2 tsp (2.5 g) ginger, finely grated

For the Gelatin Broth (Soup Part)

1/2 cup (120 ml) chicken broth

1 tbsp (15 ml) unflavored gelatin powder

For Garnish and Dipping Sauce

1 tbsp (15 ml) rice vinegar

Fresh ginger, julienned for serving

Instructions

Prepare the Gelatin Broth Heat the chicken broth until warm, then add the gelatin powder and stir until dissolved. Pour into a shallow dish and refrigerate until firm, about 1 hour. Once set, cut into small cubes.

Make the Dough In a large bowl, mix the flour and water until a dough forms. Knead for about 10 minutes until smooth and elastic. Cover and let it rest for 30 minutes.

Prepare the Filling In a mixing bowl, combine ground pork, soy sauce, Shaoxing wine, sugar, salt, sesame oil, and grated ginger. Mix well, then fold in the gelatin cubes gently to keep them whole.

Roll and Shape the Dumplings Divide the dough into small pieces (around 1-inch in diameter) and roll each piece into a thin wrapper. Place a spoonful of filling in the center of each wrapper, carefully gathering and pleating the edges to enclose the filling and gelatin.

Steam the Dumplings Place the dumplings in a steamer lined with cabbage leaves or parchment paper to prevent sticking. Steam for 8-10 minutes over boiling water until the dumplings are cooked through and the broth inside is hot.

Serving

Serve Xiaolongbao hot with a dipping sauce made of rice vinegar and julienned ginger.
