Sachertorte is Austria’s most famous chocolate cake, created in 1832 by Franz Sacher for Prince Metternich. This rich, dense chocolate cake is layered with apricot jam and coated in a glossy chocolate glaze. Traditionally served with whipped cream, it’s a must-try for any dessert lover.

Ingredients:

Cake:

4.4 oz (125 g) dark chocolate (at least 55% cocoa)

½ cup (115 g) unsalted butter, softened

½ cup (100 g) granulated sugar

1 tsp vanilla extract

6 eggs, separated

⅔ cup (85 g) all-purpose flour

1 pinch of salt

Filling & Glaze:

½ cup (160 g) apricot jam

7 oz (200 g) dark chocolate (for glaze)

½ cup (120 ml) heavy cream

Instructions:

Step 1: Prepare the Cake Batter Preheat oven to 350°F (175°C) and grease a 9-inch (23 cm) springform pan. Melt the chocolate over a double boiler, then let it cool slightly. Cream butter and sugar until light and fluffy. Add vanilla extract. Mix in egg yolks one by one, then stir in melted chocolate. In a separate bowl, beat egg whites with a pinch of salt until stiff peaks form. Gently fold half of the egg whites into the batter, then fold in the flour. Finally, add the remaining egg whites.

Step 2: Bake the Cake Pour the batter into the prepared pan and smooth the top. Bake for 45–50 minutes or until a toothpick inserted comes out clean. Let the cake cool completely, then slice it in half horizontally.

Step 3: Add the Apricot Jam Heat the apricot jam slightly and spread half over the bottom cake layer. Place the top layer back on and cover the entire cake with the remaining jam.

Step 4: Prepare the Chocolate Glaze Heat the heavy cream until hot but not boiling. Pour over the chopped chocolate and stir until smooth. Pour the glaze over the cake, smoothing with a spatula.

Step 5: Let It Set Allow the cake to set at room temperature for at least 2 hours before serving.

Serving: Serve slices of Sachertorte with a dollop of freshly whipped cream and a cup of Viennese coffee for an authentic Austrian experience.
