Ingredients

8 oz (225 g) dried peaches (huesillos)

½ lb (225 g) mote wheat (cooked, soft wheat)

5 cups (1.2 L) water

½ cup (100 g) sugar

1 cinnamon stick

3 cloves

1 tbsp honey (optional)

Instructions

Soak the Peaches: Place the dried peaches in a bowl and cover with water. Let them soak for 8 hours or overnight.

Cook the Peaches: In a large pot, combine the soaked peaches, water, sugar, cinnamon stick, and cloves. Bring to a boil, then reduce to a simmer and cook for about 30 minutes until the peaches are soft and the liquid has a syrupy consistency.

Prepare the Mote Wheat: If using pre-cooked mote wheat, rinse it well. If not, cook the mote wheat in boiling water until tender, about 30-40 minutes. Drain and set aside.

Combine and Chill: Add the mote wheat to the peach syrup and refrigerate the drink until well chilled, about 1-2 hours.

Serve: Pour the mixture into glasses, ensuring each portion has a balance of syrup, peaches, and wheat.
