Ingredients:
Meat and Vegetables:
1.5 lb (700 g) pork or chicken, diced
2 large onions, sliced
2 bell peppers, sliced
2 medium tomatoes, diced
2 cups (480 ml) mushrooms, sliced
2 cloves garlic, minced
Spices and Seasoning:
1 tsp paprika
1 tsp dried thyme
1 tsp black pepper
1/2 tsp salt
1 bay leaf
Other Ingredients:
1/2 cup (120 ml) white wine
1/4 cup (60 ml) vegetable oil
1/2 cup (120 ml) water
1 tbsp parsley, chopped (for garnish)
Instructions:
Prepare the Meat: Heat the vegetable oil in a large skillet or pot over medium heat. Add the diced meat and cook until browned on all sides. Remove the meat and set aside.
Sauté the Vegetables: In the same skillet, add the onions and garlic. Cook for 2–3 minutes until softened. Add the bell peppers, mushrooms, and tomatoes, and sauté for another 5 minutes.
Combine and Season: Return the meat to the skillet with the vegetables. Add the paprika, thyme, black pepper, salt, and bay leaf. Stir well to combine.
Simmer the Kavarma: Pour in the white wine and water. Bring to a boil, then reduce the heat to low. Cover and simmer for 30–40 minutes, stirring occasionally, until the meat is tender and the flavors meld.
Finish and Garnish: Remove the bay leaf. Adjust seasoning if necessary. Garnish with chopped parsley before serving.
Serving: Serve Kavarma hot with crusty bread, steamed rice, or mashed potatoes. A glass of Bulgarian wine makes the perfect pairing for this rich and savory dish.
