2 lbs pumpkin, peeled and diced

1 lb beef stew meat, cut into cubes

1 cup diced onion

1 cup diced carrots

1 cup diced potatoes

1 cup diced celery

3 cloves garlic, minced

2 tablespoons tomato paste

1 teaspoon thyme

1 teaspoon parsley

Salt and pepper to taste

Water or beef broth

Olive oil


In a large pot, heat olive oil over medium heat. Add diced onion and minced garlic, sautéing until fragrant. Add the beef stew meat to the pot and brown on all sides. Stir in tomato paste, thyme, parsley, salt, and pepper, cooking for a few minutes to enhance flavors.
