Fold the sides of the leaf over the filling, then roll it up tightly from the bottom to the top, forming a compact cylinder. Repeat with the remaining grape leaves and rice mixture. Place the stuffed grape leaves in a large pot in a single layer, seam side down. Pour enough water over the dolmades to cover them, then place a plate on top to weigh them down. Cover the pot and bring the water to a boil. Reduce the heat and simmer for about 45 minutes to 1 hour, or until the rice is cooked and the grape leaves are tender. Remove the dolmades from the pot and let them cool slightly before serving. Serve dolmades warm or at room temperature, accompanied by Greek yogurt or tzatziki sauce for dipping.
