Beskuit, a beloved traditional treat in Lesotho and throughout Southern Africa, is a type of rusks made from a simple dough that is baked, sliced, and then baked again until crisp. These crunchy biscuits are perfect for dipping into coffee or tea and are a staple in many Basotho households.
Ingredients:
4 cups all-purpose flour
1 cup sugar
1 teaspoon baking powder
1/2 teaspoon salt
1/2 cup butter, melted
2 large eggs
1 cup buttermilk or maas (sour milk)
Instructions:
Preheat your oven to 350°F (175°C) and grease a baking sheet or line it with parchment paper. In a large bowl, mix together the flour, sugar, baking powder, and salt. In a separate bowl, beat the eggs and then add the melted butter and buttermilk or maas. Mix well. Gradually add the wet ingredients to the dry ingredients, stirring until a stiff dough forms. Turn the dough out onto a floured surface and knead lightly until smooth. Divide the dough into two equal portions and shape each portion into a log about 2 inches in diameter. Place the logs onto the prepared baking sheet, leaving space between them to allow for spreading. Bake in the preheated oven for 25-30 minutes or until lightly golden brown and firm to the touch. Remove the baked logs from the oven and let them cool for 10-15 minutes. Reduce the oven temperature to 300°F (150°C). Using a sharp knife, slice the logs into 1-inch thick slices and place them back on the baking sheet. Return the slices to the oven and bake for an additional 20-25 minutes, turning them halfway through, until dry and crisp. Once baked, remove the rusks from the oven and let them cool completely before storing in an airtight container.
