Ingredients:

1 lb (0.45 kg) fresh spinach, chopped

8 oz (225 g) feta cheese, crumbled

1 onion, finely chopped

2 cloves garlic, minced

1/4 cup chopped fresh dill

1/4 cup chopped fresh parsley

1/4 cup olive oil

Salt and pepper to taste

1 package phyllo dough, thawed if frozen

1/2 cup melted butter or olive oil for brushing

Instructions:

Preheat your oven to 375°F (190°C). Lightly grease a baking dish. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until softened. Add the chopped spinach to the skillet and cook until wilted, about 3-5 minutes. Remove from heat and let cool. In a mixing bowl, combine the cooked spinach mixture, crumbled feta cheese, chopped dill, chopped parsley, salt, and pepper. Mix well to combine. Unroll the phyllo dough sheets and cover them with a damp towel to prevent drying out. Place one sheet of phyllo dough in the prepared baking dish and brush it lightly with melted butter or olive oil. Repeat with several more sheets, layering them and brushing each with butter or oil. Spread the spinach and feta mixture evenly over the layered phyllo dough. Continue layering the remaining phyllo sheets on top of the spinach mixture, brushing each sheet with butter or oil. Once all the phyllo sheets are used, tuck any overhanging edges into the sides of the baking dish to form a neat top. Score the top of the Spanakopita with a sharp knife into serving-size pieces. Bake in the preheated oven for 35-40 minutes, or until the Spanakopita is golden brown and crispy. Remove from the oven and let cool slightly before slicing and serving.
