Instructions:

In a large bowl, whisk together yogurt, lemon juice, ginger paste, garlic paste, ground cumin, ground coriander, paprika, turmeric, garam masala, cayenne pepper, and salt. Add the paneer cubes to the marinade, along with the onion, bell pepper, and tomato chunks. Gently toss until everything is evenly coated. Cover the bowl and refrigerate for at least 1 hour, or overnight for best results. Preheat your grill to medium-high heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning. Thread the marinated paneer and vegetables onto skewers, alternating between them. Brush the grill grates with vegetable oil to prevent sticking. Place the skewers on the grill and cook for 3-4 minutes on each side, or until the paneer is golden brown and the vegetables are tender. Remove the skewers from the grill and garnish with fresh cilantro. Serve hot with lemon wedges on the side.
