Ingredients:

4 cups masa harina

2 cloves garlic, minced

1 bell pepper, diced

2 tomatoes, diced

1 carrot, diced

1 potato, diced

1/2 cup green peas

1/4 cup olives, sliced

1/4 cup raisins

1 teaspoon ground cumin

Salt and pepper to taste

For Assembly:

Instructions:

In a large mixing bowl, combine masa harina, vegetable shortening or lard, salt, and baking powder. Gradually add chicken or vegetable broth and mix until a smooth dough forms. Set aside. In a skillet, heat some oil over medium heat. Add the chopped onion, garlic, bell pepper, tomatoes, carrot, and potato. Cook until the vegetables are softened. Add the cooked shredded chicken or pork to the skillet, along with green peas, olives, raisins, and ground cumin. Season with salt and pepper to taste. Cook for a few minutes until heated through. To assemble the tamales, spread a thin layer of masa dough onto the center of a banana leaf square. Add a spoonful of the meat and vegetable filling on top of the masa dough. Fold the sides of the banana leaf over the filling to enclose it, then fold the top and bottom of the banana leaf to form a packet. Tie the tamale with cooking twine or strips of banana leaves to secure. Repeat the process with the remaining masa dough and filling. Place the tamales in a steamer basket and steam for about 1.5 to 2 hours, or until the masa is firm and cooked through.
