Halim Recipe: A Hearty Persian Porridge

Halim is a nourishing and hearty Persian porridge that has been enjoyed for centuries. Made with a blend of grains, meat, and spices, this comforting dish is a staple during Ramadan and other special occasions in Persian cuisine.

Ingredients:

1 cup wheat berries

1/2 cup barley

1/2 cup split yellow peas

1 lb boneless chicken or beef, cubed

1 onion, chopped

4 cloves garlic, minced

1 teaspoon ground turmeric

1 teaspoon ground cinnamon

1 teaspoon ground cardamom

Salt and pepper to taste

6 cups water or chicken broth

Butter or ghee for serving

Instructions:

Rinse the wheat berries, barley, and split yellow peas under cold water. Soak them in water for at least 4 hours or overnight. In a large pot, combine the soaked grains, cubed meat, chopped onion, minced garlic, ground turmeric, ground cinnamon, ground cardamom, salt, and pepper. Pour water or chicken broth into the pot and bring to a boil. Reduce heat to low, cover, and simmer for about 2-3 hours, stirring occasionally, until the grains and meat are fully cooked and the mixture is thick and creamy. Use a wooden spoon or immersion blender to mash the mixture until smooth and creamy. Adjust seasoning with salt and pepper if needed.

Serving:

Serve Halim hot, garnished with fried onions, chopped cilantro, mint, and lemon wedges. Drizzle with melted butter or ghee for added richness. Enjoy this comforting porridge as a main dish or side dish during Ramadan or any time you crave a hearty meal.
