2-3 green chilies

1-inch ginger

1 tablespoon tamarind pulp

1 tablespoon chaat masala

4 cups cold water

For Filling:

1 cup boiled and mashed potatoes

1 cup boiled chickpeas

1/2 cup finely chopped onions

1/2 cup chopped fresh cilantro

1/4 cup tamarind chutney

1/4 cup mint chutney

Chaat masala for sprinkling

Instructions:

For Gol Gappa Dough:

In a mixing bowl, combine semolina, all-purpose flour, baking soda, and salt. Gradually add water and knead into a smooth dough. Cover with a damp cloth and let it rest for 30 minutes. Divide the dough into small balls and roll out into thin circles.

For Pani (Spicy Water):

In a blender, combine mint leaves, cilantro leaves, green chilies, ginger, tamarind pulp, chaat masala, roasted cumin powder, salt, and cold water. Blend until smooth. Strain the mixture through a fine sieve to remove any solids. Adjust seasoning if needed.

For Assembling:

Heat oil in a deep frying pan over medium heat. Fry the rolled-out dough circles until they puff up and turn golden brown. Drain on paper towels to remove excess oil. Once cooled, gently poke a hole in the center of each fried puri. Fill each puri with a spoonful of mashed potatoes, boiled chickpeas, chopped onions, and cilantro. Pour the prepared spicy water (pani) into each puri. Serve immediately and sprinkle with chaat masala for extra flavor.
