2 cups dried chickpeas, soaked overnight

1 teaspoon coriander powder

1/2 teaspoon turmeric powder

For Bhature (Fried Bread):

2 cups all-purpose flour

1/2 cup yogurt

1 teaspoon sugar

1/2 teaspoon baking powder

Salt to taste

Oil for frying

Instructions:

For Chole:

In a pressure cooker or large pot, heat oil over medium heat. Add cumin seeds and let them splutter. Add chopped onions, garlic, ginger, and green chilies. Sauté until onions are golden brown. Add chopped tomatoes, coriander powder, turmeric powder, and salt. Cook until tomatoes are soft and oil starts to separate. Add soaked chickpeas and enough water to cover them. Close the pressure cooker lid and cook for 5-6 whistles, or simmer in a pot until chickpeas are tender. Once cooked, add garam masala and amchur. Mash some chickpeas to thicken the gravy. Garnish with fresh cilantro.

For Bhature:

In a mixing bowl, combine all-purpose flour, yogurt, sugar, baking powder, and salt. Knead into a smooth dough, adding water if needed. Cover the dough with a damp cloth and let it rest for 2 hours. Divide the dough into small balls and roll them out into circles of about 6 inches in diameter. Heat oil in a deep frying pan over medium-high heat. Fry the rolled-out dough circles one at a time until they puff up and turn golden brown on both sides. Drain the fried bhature on paper towels to remove excess oil.

Serving:
